That’s Amore Cheese is an award-winning Australian producer of authentic Italian-style cheeses. They supply restaurants, delis and supermarkets across Australia and have a team of around 100 people.

They are looking for a Dairy Product Maker to join their production team in Thomastown, Melbourne. This is a permanent, full-time role.

What you will do:

• Prepare and process milk for cheese production
• Monitor pasteurisation, fermentation and curd development
• Perform curd cutting, cooking, draining and stretching for cheeses like mozzarella and burrata
• Mould, portion and form cheeses to specification
• Monitor moisture, texture and quality throughout production
• Conduct quality checks and record batch and production data
• Ensure compliance with food safety procedures (HACCP, GMP)
• Set up, operate and monitor dairy production machinery
• Assist with weighing, packing and labelling finished products
• Maintain a clean and organised work environment
• Support production line operations to meet daily targets

What you need:

• Experience in dairy manufacturing, food production or commercial kitchens is preferred but not essential
• Understanding of food safety and hygiene standards
• Experience operating manufacturing equipment is advantageous
• Strong attention to detail and quality focus
• Physically fit and comfortable in a fast-paced production environment
• Strong teamwork and communication skills
• Reliable, punctual and safety-conscious

Formal dairy or food technology qualifications are highly regarded but not essential. Training will be provided for the right person.
